Cannellini Beans with Broccoli Rabe

Ingredients

Mirepoix (chopped up carrots, onion, celery)
Broccoli Rabe
Cannellini beans

Instructions

  1. In a large sauce pan (or pot)

  2. Add: EVOO, Red pepper flakes (to taste), Mirepoix
    Cook until soft

  3. Add: Robbies (cute nickname) and cook until soft

  4. Add: Beans and some water and simmer until it looks and feels like it's all blended together (roughly 20 minutes)

  5. Add: Salt to taste

Crusty Italian bread and some red vino make it perfetta!

*When I cook I use red pepper flakes more often than ground black pepper. I like the heat red pepper flakes bring to a dish.
