Salmon with Chickpeas, Spinach & Pesto

Ingredients

Salmon
Chickpeas (dried or canned)
Spinach
*Pesto (when I don’t make my own, I use Cibo brand)
1 pad of butter
Garlic
EVOO
Red pepper flakes

Instructions

Fish prep

Squeeze with half a lemon and add ground sea salt & ground pepper to the top of your salmon (skin side down); let sit while you add EVOO and 1 pad of unsalted butter to a hot pan (add more or less according to taste).

Cook

Once butter is melted and bubbling, put the fish in skin side down. Depending on how rare or cooked you like your salmon - flip it when you're ready. Option to squeeze more lemon on fish.

In a separate pan, saute garlic & red pepper flakes in EVOO. Once garlic is golden brown, add spinach. Once spinach is cooked, add chickpeas (include a little water). Mix together then add about 3 tablespoons of pesto. Mix all that together, cover and let simmer about 7 minutes.

Once your salmon is cooked, plate it with the chickpea spinach on the side.

Other options

You can replace the fish with pasta or another protein, you can throw the chickpea spinach over rice or even over garlic bread...Get creative!
